Leerdammer Fillet of Fish Burger

1. Preheat a char-grill pan or the grill. Toss the vegetables in 1 tbsp olive oil and cook in batches in the char-grill pan, or spread out onto a baking sheet and grill for 12-15 minutes, turning occasionally, until tender. Season with salt and pepper and leave to cool a little. 2. Heat the remaining oil in a frying pan and add the cod loin fillets. Cook on the hob for 3-4 minutes, then finish off under the grill for a further 3-4 minutes. The fish should look opaque – and should flake easily when tested with a fork. 3. Toast the cut sides of the rolls lightly, then top with the grilled vegetables and a fillet of fish. Top each one with a slice of Leerdammer ® Toastie & Burger. Add a few basil leaves or some flat leaf parsley, then serve.


  • 1 red pepper, deseeded and cut into chunks

  • 1 yellow or orange pepper, deseeded and cut into chunks

  • 1 courgette, sliced

  • 75g fine asparagus spears

  • 2 tbsp olive oil

  • 4x120g cod loin fillets (skinless)

  • 4 seeded rolls, split

  • 4 slices Leerdammer ® Toastie & Burger cheese

  • Basil leaves or flat leaf parsley, to garnish
