Leerdammer and Chorizo Crunch Croute Salade

1.Preheat the oven to 200°C/Fan 180°C/Gas Mark 6. Cut half the cheese into 2cm cubes and grate the remainder. Put the bread, oil, garlic and grated cheese on a baking sheet and toss together to create croutons. Bake for 10 minutes or until the croutons are golden brown. Use a fish slice to carefully scrape the croutons and any remaining toasted cheese off the baking sheet – this will crisp as it cools. Set aside. 2.Meanwhile, heat a small pan, add the chorizo sausage, without any oil and cook for 2-3 mins or until beginning to brown. Drain on kitchen paper. 3.Place the lettuce, tomatoes, and pepper together in a large salad bowl. Whisk all the dressing ingredients together in a small bowl with salt and freshly ground black pepper. Add the cheese croutons and toasted cheese, cubed cheese and fried chorizo to the salad bowl and toss together. Drizzle over the dressing and serve immediately.

Dressing :

4 tbsp olive oil 3 tbsp red wine vinegar 1 tsp Dijon mustard 1 tsp clear honey

  • 100g chorizo sausage, skinned and sliced

  • 1 heart of sweet Romaine lettuce, torn into pieces

  • 150g cherry tomatoes, sliced

  • 1 yellow pepper, deseeded and sliced
