Chicken and Leerdammer Light quesadilla

1. Mix the chicken, sweetcorn and salsa 2. Put 1 tortilla on a chopping board and lay 2 slices of Leerdammer Light over. Spread the chicken almost to the edges then arrange the remaining slices of Leerdammer Light soon top 3. Put the other tortilla on top, pressing the edges together to enclose the filling. Cook in large hot frying pan for about 1 minute, turn it over and cook another minute 4. Slide it out of the pan and cut into quarters. Serve warm with green salad


  • 50g cooked chicken breast, torn

  • into small pieces

  • 2 tbsp canned sweetcorn

  • 2 tbsp tomato salsa

  • 2 x small plain or wholemeal tortillas, around 40g each

  • 4 slices Leerdammer Light
